Koullouros is particularly well-placed to talk about the growth of herbal teas in Australia. Today, Ovvio's range – which includes both traditional caffeinated teas and dozens of herbal blends – can be found everywhere from exclusive resorts such as One&Only Wolgan Valley to gourmet grocers in Darwin and Singapore. An Ovvio flagship, just off Oxford Street in Sydney, has both a store and naturopathy clinic, making explicit Koullouros's belief that tea can be a treatment.

"Drinking herbal tea for its therapeutic benefits certainly seems to be gaining mainstream acceptance," she says. "But herbal teas have always been prescribed by naturopaths and herbalists because they're so easy and accessible. To have a calming herbal tea, or something for sugar cravings, or for your tummy... it's kind of a no-brainer at our end."
