Koullouros is particularly well-placed to talk about the growth of herbal teas in Australia. "Drinking herbal tea for its therapeutic benefits certainly seems to be gaining mainstream acceptance," she says. "But herbal teas have always been prescribed by naturopaths and herbalists because they're so easy and accessible.
